Sweet Potato Hash
Found a recipe in one of the muscle rags for a sweet potato hash. Don't remember what they had, but I took the concept and worked it up myself.
1 sm- med yellow onion, chopped
1 med- lg sweet potato, grated
salt, pepper, chili powder, oil
Saute the onion in a little bit of oil, add the sweet potato. Salt, pepper, to taste, add the chili powder (about 1- 2 tsp). Fry until the potato is crisped up a bit.
Sometimes I add some turkey breast into the mix, or if my wife is having some, turkey Spam.
2 eggs, hash, maybe a sandwich thin. Ridiculously awesome breakfast for a winter day.

I made a version of this the other day
something like this
I used 1/2 a large yellow onion, chopped.
2 medium sweet potato, grated
4 slices turkey bacon
~tsp vermont maple syrup
dash of cinnamon
got the bacon crispy and broke into pieces
saute the onion in olive oil, then add the sweet potato. some salt and peper. then added the bacon. when sweet potato is crispy and just about done, i added the syrup and cinnamon and mixed it in.
